Tacama™ 2007 Extra Virgin Organic Olive Oil is a selection of organic olives that come from olive trees grown close to the clear waters of Tinguiririca River in the Colchagua Valley (Región Del Libertador Bernardo O´Higgins).
Harvest took place on May 15 after a careful supervision of the olives oil content, allowing us to get the balance and quality needed for this selection of extra virgin organic olive oil.
Organic certification and nature
This oil was extracted and certified by IMO procedures, obtaining a Supreme Organic Extra Virgin Olive. Our extraction plant obtained the IMO certification in 2006. Tacama™ is an extra virgin organic olive oil made with Organic olives from Emiliana Vineyards Grooves, grown at Los Robles estate at the heart of Colchagua Valley. These unique organic grooves are carefully grown and managed by experts according to IMO organic certification procedures. Tacama Extra virgin organic olive oil is just the natural product obtained from the organic olives, with no additives or colorants or chemical agents that can alter the nature of this product. Colchagua Valley is one of the most important valleys in relation to agricultural production. Warm and naturally dry, Colchagua is a narrow valley that begins at the Andes Mountais range and extends towards the Pacific Ocean, irrigated mainly by the clear and pure waters of Tinguiririca and Cachapoal rivers. In an area of approximately 910.000 hectares you can find numerous micorclimates, types of soils and different kinds of crops such as vineyards and olive groves. The Colchagua Valley is known around the world by its aromas and flavours of Chile that are present in every corner, its hard working people and high quality products.

Tacama™ Extra Virgin Organic Olive Oil is obtained by cold extraction system with the most carefully selected organic olives. The final blend is characterized by its young olive aromas, with herbal tones and fruity flavours, leaving at mouth a balanced taste among bitter and peppery. This Limited Edition of Tacama Extra Virgin Organic Olive Oil is the result of the history of this valley full of Chilean traditions and our knowledge in Oil producing.
Smoked point and gourmet qualities
It has a high smoking point of 180°C (356 °F), which allows this product to keep its quality even when cooked at high temperature. Using Tacama™ Extra Virgin Organic Olive Oil, food is instantly enhanced by the oil’s gourmet qualities. Good for dressing all kinds of salads, boiled vegetables, plain pasta and grilled white fish, among others.
Health and nutrition features of Tacama™ Extra Virgin Olive Oil
Extra virgin olive oil is known around the world for its numerous benefits for human health and its gourmet qualities, it is the base of Mediterranean diet. Tacama™ Extra virgin olive oil has an important function by helping in the control of “bad” cholesterol (accumulated in arteries) by raising the levels of the “Good” (H.D.L) one. This is because Tacama™ contains an important amount of Oleic Acid composed by molecules of non saturated fats which have a more positive effect in blood levels than other kinds of oils.
Recent studies determined that olive oil can act as an anticoagulant diminishing the risks of arterial thrombosis and heart attacks.
Important amounts of antioxidants such as vitamin E are present in extra virgin olive oil; this vitamin has the ability to slow down the cellular aging by protecting the cellular membrane from the attack of free radicals and enhance the immune functions of the organism. Tacama™ Extra virgin organic olive oil also contains Vitamin A, good for eye function.
